Our roots are at the foot of Cergowa, while our curiosity for good flavour also takes us south. That is where we source olive oil for fresh bread, shared tables and everyday rituals.

It all begins with the raw material. The seeds give each oil its own character.
Cold pressing
Mechanical pressing releases the oil from the seeds. A simple process that calls for care.

We work on a small scale, paying attention to what goes into every bottle.

Cergovia begins with personal commitment.
Mateusz is building a brand rooted in his home region. Today, cold-pressed plant oils are at its heart. In time, more good products will join them.
